My mother-in-law was in town last month and we wanted to get as much use out of our grill as possible during her visit (since she so generously bought it for us!). I found this “best flippin’ grilled chicken from Reel Flavor (they’re title for it, not mine). I was expecting, given the name, the BEST grilled chicken. The verdict? I was honestly a bit disappointed. It was good, sure, but far from the best. I didn’t really make any adjustments, but it just wasn’t the very best. I think if it was just titled “grilled chicken” then it would not have been disappointing.
It kind of reminds me when I saw The Hitchhiker’s Guide to the Galaxy several years ago. I was told that it was literally the best movie ever. Sure, it was good, but the best? No. (If you *did* think Hitchhiker is the best, I apologize for offending you, hehe).
“Best Flippin’ Grilled Chicken”
-6 chicken breast halves
-1/4cu cider vinegar
-3tbsp coarse ground mustard
-3 cloves garlic, minced
-1 lime, juiced
-1/2 lemon, juiced
-1/2cu brown sugar
-6tbsp olive oil
-Pepper to taste
-Mix together the cider vinegar, mustard, garlic, lime juice, lemon juice, brown sugar, olive oil, salt and pepper into a bowl.
-Transfer marinade to a large Ziploc bag and add the chicken breasts, then shake the bag to thoroughly coat the chicken breasts.
-Marinate for as long as possible (overnight if possible).
-Preheat outdoor grill, then cook the chicken over indirect heat or low heat (it will take a bit longer, but makes it juicier).
-Depending on the grill, it will take about 8-10 minutes per side depending on your grill
-Continually coat on the excess marinade during the cooking process.
