Merry Christmas Eve, everyone!! Tonight I am celebrating with my family on my mom’s side – and it’s my husband’s first time to celebrate with my family. I am definitely looking forward to it. My husband and I aren’t exchanging fancy or expensive gifts this year – basically moving across the country and moving into our apartment is gift and expensive enough! 😉 But we did allot $10 for us to spend on each other – I’m excited to see what he chose! In all honesty, my gift for him is a bit on the practical side, but at least I know he will use it every day.
Also, we got a Christmas tree, which was a gift for each other as well. It is so festive to have a decorated tree with lights over the holidays, and since we only put it up about a week ago, we plan to keep it up until it literally dies! Might as well get our money’s worth, right?
The recipe I have for you today is a beef and bean taco bake by Tiffany from Eat at Home. Basically, it’s Mexican comfort food. How can you go wrong with ground beef, black beans, salsa, cheese, and tortillas? Really, you can’t. My husband and I practically gobbled this up, but thankfully we saved some leftovers for work-lunches the next day.
Beef and Black Bean Taco Bake
-1lb leanest ground beef, browned
-1 can black beans, drained and rinsed
-1 jar of black bean and corn salsa
-6-10 tortillas, cut or torn into bite-size pieces
-2cu shredded cheddar or Mexican blend cheese
-extra cheese on top, if desired
-Preheat oven to 350 degrees.
-Mix all ingredients together in a large bowl.
-Spray a casserole/baking dish with cooking spray and pour in the ingredients from the bowl.
-Cover and bake in the preheated oven for 30-45 minutes (uh…I just realized I didn’t cover mine…and it was still amazing).
