Lighter Sesame Chicken

TGIF! Can I get an amen??  I am so ready for the weekend, it’s not even funny.  My job is not particularly stressful right now (thanks to still being in training/shadowing/observing mode!), but there has just been so much going on since moving, that I am ready for a few days of rest.  Almost everyday, it has been one thing after another to deal with…whether it’s our storage unit, our car insurance, getting our WA state registration, our pharmacy, and trust me, I could go on!

I also would like to add that today is my dad’s birthday!!  I will refrain from announcing his age for all of the Internet to know (though I did tease him about it last night on the phone).  My husband and I will be stopping over to see him after work tonight.

We also have a fun weekend planned of visiting friends that are housing our cat for us, going to church, and visiting friends that just had a little baby girl a few weeks ago.  I also plan to SLEEP IN!

Regarding this Lighter Sesame Chicken recipe from Iowa Girl Eats…well…I changed a lot. Not on purpose, but rather I realized late in the game that I did not have ingredients I thought I did.  For example, I still swear up and down that I brought my jar of sesame seeds with me from New York, but I tore apart my bag of spices and sauces, as well as my mom’s spice cabinet, and could not find them anywhere.  They could be floating around who-knows-where along with my missing quinoa and bulgur.  So I decided to substitute sesame oil for the seeds (obviously not the same, but hey, sesame is sesame, right?).  Additionally, I used flour instead of cornstarch, and that mixed with the egg white did not turn out the way it did for the original blogger, so I added an extra egg…without that, it turned into one flour’n’egg white clump.  Finally, I cooked the broccoli separate and just added it to my husband’s plate, cuz I didn’t feel like picking broccoli out of my own meal, and I added green beans to give myself more veggies.  I actually really liked how it turned out with the sesame oil (you really can’t go wrong with the stuff), but it would have been nice to have the seeds too.  Alas.

Lighter Sesame Chicken

serves 3-4

Ingredients:
-1cu brown rice
-1/4cu honey
-2tbsp sesame seeds (or 1ish tbsp sesame oil…)
-2tbsp soy sauce
-1 garlic clove, minced
-1 egg white
-2tbsp cornstarch
-1lb chicken, cut into bite-size pieces
-salt & pepper
-1tbsp vegetable oil
-4 green onions, chopped
-broccoli florets
other veggies of your choosing (I added green beans)

Directions:
-Prepare rice according to package directions.
-Meanwhile, combine honey, sesame seeds, soy sauce, and garlic together in a small bowl then set aside. In a separate larger bowl, whisk together egg white and cornstarch until smooth. Season chicken pieces with salt and pepper then add to egg white mixture and toss to evenly coat.
-In a small saucepan, steam broccoli until crisp tender then set aside.
-Heat oil in a large skillet over medium-high heat, then carefully add chicken. Cook for 3-4 minutes prt side, or until cooked through. -Turn off heat and remove skillet from burner. Add prepared sauce and green onions then toss to combine. Stir in broccoli and other veggies, then scoop mixture into bowls over cooked rice.
