BBQ Bacon Burger

Well, I am sad to report that I am STILL not done reading The Girl Who Played With Fire, and if you recall from my last blog post, I stated I was going to finish it that night.  I lied.  Now I only have 20 pages left.  I read a little bit this morning before work, and I did not want to put it down!  But for some reason I don’t think my boss would have appreciated me not coming into work because I had to finish my book. =P

Additionally, I have been pretty good with the gym this week.  As I mentioned in the previous post, as well, I went to the gym on Sunday afternoon and went again last night (Tuesday).  I’m considering going tonight after dinner, too (I can finally get those last 20 pages read while on the stationary bike!).  Besides, dinner tonight will probably be quick, because it’s cooking away in the crockpot as we speak (check the blog in a few days for tonight’s recipe!).

So, I found these BBQ Bacon Burgers from Six Sisters’ Stuff (say that 10 times fast) and they were amazing.  AMAZING.  Seriously, I never would have thought to crumble bacon INSIDE the burger.  Pure genius.  I’m sure all of the bacon-lovers out there are shaking their heads at my novice self.  In any case, I think the key to avoid biting into stringy pieces of bacon (which is what a friend of mine said she did in the past!), is to cook the bacon until it’s mostly or all crispy.  This works well for me, since I don’t like fatty, undercooked bacon (even though my own mother loves it, that is something we do not share, hehe).  In fact, I typically trim some of the fat off the bacon before cooking.  My pieces of bacon were pretty small, and I saved a couple of pieces to top the burgers with, so it wasn’t incredibly noticeable in the burger mix, but still was very good.  I also loved the sauce mix.  Overall, it’s hard to go wrong with a regular burger, and even harder to go wrong with a bacon burger!


BBQ Bacon Burgers

serves 4

-1/4cu mayonnaise (reduced fat, or the olive oil/mayo mix)
-1/4cu barbecue sauce (I *always* use the original Sweet Baby Ray’s)
-4+ bacon strips, cooked and crumbled
-1.5tsp dried minced onion
-1.5tsp steak seasoning (the original blogger recommended McCormick Montreal seasoning, and I happened to have the McCormick Montreal chicken seasoning, so I used that, and it worked perfectly)
-1lb leanest ground beef
-4 slices Monterey Jack cheese (or whatever you have – we happened to have provolone on hand)
-whole wheat hamburger buns
-other hamburger toppings of your choice (tomatoes, lettuce, pickles, onions, etc.)

-Mix together mayonnaise and barbecue sauce in a small bowl, then set aside (I did this while I cooked the bacon).
-In another bowl, combine the crumbled bacon, 2 tablespoons mayonnaise mixture, onion and steak seasoning (I also mixed these ingredients, minus bacon, while the bacon was cooking); add the ground beef and mix with your hands. Shape into four patties.
-Grill burgers over medium heat for 5-7 minutes on each side or until done, then add cheese and continue to grill for another 1-2 minutes.
-Top each burger with a grilled bun, dollop of mayo mix, and other condiments.
