BBQ Salmon Burgers

I am halfway through The Girl Who Played With Fire and it is amazing.  It is the second book in the Millenium trilogy by Stieg Larsson, for those that live under a rock don’t know.  The first book actually took me awhile to get through, because the first 100ish pages were just kind of “eh.”  Then it started to get REALLY GOOD and I could not put it down.  And by “not put it down” I mean that it still took me awhile to read, because I spend a good portion of my time cooking, cleaning, working, and watching Law and Order SVU or CSI Miami.  In any case, I’m almost halfway through the second book, and once again, it just started to get REALLY GOOD.  I read at least 10 pages last night (that’s a lot for me, in one sitting!).  It feels weird to say that, cuz I love to read…I remember staying up til 2am some nights to finish a Jodi Picoult book (she’s my favourite authour – check her out ASAP), and in elementary school, I got in trouble by my teachers for reading too much.  Yes, you read that correctly.  So the fact that 10 pages a night is a lot, is really sad.  Alas.

Onto the BBQ salmon burgers (FYI, I accidentally typed “BBW” at first, haha).  They were delicious.  I gobbled up one burger, my roommate and his friend gobbled up the second burger (they shared, since they had burgers of their own), my husband sort-of gobbled up one, and then there was one left over for me to have for lunch yesterday – and yes, it was just as amazing as a cold leftover.

We were grilling on Sunday night, and it turns out that our roommate (and his friend and girlfriend) have never had fish before.  Seriously, how is that possible?  Well, they said they’ve had fish, like, once.  But still.  Impossible.  And my husband likes fish (if you remember the 1,000,000,000 tilapia recipes I posted awhile back), but isn’t the biggest fan of salmon (being from the Pacific Northwest, this greatly offends me and my people).  We both thought that ground in a burger, it might be different.  While he was polite enough (or hungry enough) to eat one, he gladly offered the leftovers to me for lunch.  One thing to note, also, is that when I ground mine in the food processor, there was no “slightly ground”…it was either…one piece of fish, or a sort-of fish paste.  It sounds gross, but was still pretty good.  Next time, though, I might take it to the butcher and ask them to put it in their grinder for me.

BBQ Salmon Burgers

-1lb salmon (skinless or skin removed)
-1/3cu panko breadcrumbs (I used more cuz it was so moist)
-2tbsp bbq sauce (Sweet Baby Ray’s of course!)
-1tbsp dijon mustard
-2tbsp freshly grated parmesan cheese (I forgot this somehow, and ended up sprinkling it on top of the burgers while still on the grill)
-2 garlic cloves, minced
-1/2tsp black pepper
-1/4tsp salt
-1/2tsp onion powder
-1/2tsp smoked paprika
-4 whole wheat buns

-Pulse salmon in a food processor until somewhat ground (or in my case, almost paste-y).
-Remove and add salmon to a bowl with remaining ingredients (except for buns obviously) and mix until just combined.
-Form into 4 equally-sized burgers. Heat your grill over medium-high and cook burgers on each side until golden – about 3-4 minutes per side (we had to grill them with aluminum foil over the grates, since they were so moist…yes, I said moist 2x in this blog).
-Serve with a dollop of additional barbecue sauce, lettuce and red onion.
