Tater Tot Casserole

So I didn’t menu plan last week at all.  I (or my husband) just randomly threw stuff together, plus we went out one night for a friend’s birthday.  Today, I pulled out my recipe binder once again, to plan our meals for the week.  The first time I had tater tot casserole was several years ago at a friend’s party.  The next time I had it was with my old roommates.  Until tonight, I had never made it myself.  I found a yummy looking recipe for it, and it tasted the same way it looked!  My husband and I were able to have dinner, along with our roommate, and 3 tupperwares of leftovers, as well.  It definitely helped ease the usual Sunday depression, however now that dinner is over, my depression (about having to go back to work tomorrow) has returned…


-1.5lbs ground beef or ground turkey (I used ground sirloin)
-1/2 onion, diced
-1 package of tater tots/crowns
-1 10oz can cream of chicken soup
-8oz container sour cream or light sour cream
-1cu low fat milk
-2cu grated cheddar cheese
-pepper, to taste
-garlic salt, to taste (I used powder)

-Pre-heat oven to 350 degrees
-Brown ground beef and diced onions, adding pepper and garlic salt to taste. Drain.
-Pour ground beef & onion mixture into the bottom of a 9 x 13 casserole dish
-In a separate bowl mix together the soup, sour cream and milk
-Pour the soup mixture on top of the ground beef layer spread evenly to cover the meat mixture. Top with tater tots, sprinkle with grated cheese over the entire casserole
-Bake uncovered for 30 minutes or until the casserole is bubbly and cheese is completely melted
