Tilapia Peach Packets

Tonight’s meal was in an effort to use up the rest of the tilapia fillets I bought a few weeks ago.  And yes, I’m still obsessed with How Sweet It Is‘s recipes.  I made the marinade for the fillets last night and let them marinate overnight (the longer you marinate, the better, in my book).  I served these with stir fried fresh green beans (yum).  This dish was tasty, but it wasn’t one of the best meals I’ve made, and I’m not sure it will make it into our future menu planning rotation.  However, it’s always great to try something new, and what doesn’t work for me, might work for someone else!  Regardless, my husband and I still ate it, so it couldn’t have been that bad! 😉

-2 tilapia fillets (but make as many as you need for the amount of people you are serving, obviously)
-2 peaches, peeled and sliced (I just realized I didn’t peel mine)
-2 garlic cloves, minced
-1/4cu olive oil (I found this to not be enough, in order to use in the blender, so I used about 1/2cu)
-1/4cu fresh parsley, coarsely chopped (I used dried)
-1/2tsp salt
-1/2tsp pepper
-1 medium red onion, sliced

-In a food processor or blender, combine peaches, garlic, olive oil, and parsley, and blend until combined and pureed
-Put tilapia fillets in a ziplock bag and pour in marinade, marinate for at least 14hrs
-When ready to cook, heat your grill on the highest setting (or pre-heat oven to 425)
-Tear squares of aluminum foil and set a few slices of red onion down each square
-Remove fillets from marinade and place over the onions
-Fold the sides of the foil up to close
-Grill (or bake) onion-side down, if grilling, about 10-12mins, or if baking, about 12-15mins
