Brown Sugar Glazed Chicken

Have I mentioned before that I love Stephanie O’Dea’s Crock Pot Blog? I think my last post was the first time I mentioned it. So there ya go: I love it. She seems so down-to-earth and I have been following her blog since she made her 2008 NYE resolution to use her slow cooker once a day for the year. I got this chicken recipe from her as well.  She said it was good and not too sweet and for the most part, I agree.  However, I made this while in a brief two-week-long freezer-cooking phase and it definitely tastes less-good each time it’s reheated.  Also, make sure you have enough sauce/glaze on everyone’s piece.  Additionally, I find that chicken breaks up in the crock pot, so my chicken breasts never remain whole.  That’s not entirely a bad thing, and these could have easily been served as sandwiches, also.

brown sugar chicken

-boneless & skinless chicken breasts [I used 6, since I was freezer-cooking, but obviously you should cook as many as you need]
-1cu brown sugar
-1/4cu lemon-lime soda
-2/3cu vinegar
-3 cloves garlic, chopped
-2tbsp soy sauce
-1tsp ground black pepper

-Place chicken in the crock pot
-Cover with dry ingredients, then liquid ingredients
-Cook on low for 6-9hrs or high on 4-5hrs
