I had an unexpected night off work so I decided to try to today’s allrecipes recipe, which gets sent to my email daily. It was a hit! However, next time I will probably use less cream cheese. I paired it with rice from a box. One of the great things about cooking this dish is that I love colourful dishes!
-burrito size flour tortilla shells
-2tbsp. vegetable oil
-1 small onion, chopped
-1 red bell pepper, chopped
-1tsp. minced garlic
-15oz. black beans, drained and rinsed
-1tsp. minced jalapeno peppers [[I just used a whole pepper]]
-3oz. cream cheese [[though, like I said, I would use less]]
-Wrap tortillas in foil and heat in the oven at 350 degrees, for 15min.
-Heat oil in a large skillet over medium heat, put in onion, pepper, garlic, and jalapeno and cook for 2min. Add beans, stir, and continue cooking for 3 more minutes.
-Cut cream cheese into cubes and add to skillet with the salt. Cook for 2 more minutes, while stirring the mixture. Stir in several pieces of chopped cilantro. Garnish the mixture with extra cilantro, if desired.
-Spoon mixture on the tortillas, roll up, and enjoy!
