Basil Goat Cheese Pizza

When my dear friend Spencer left the country for a 6mo study abroad, I wanted us to get together and make something tasty as a good-bye get together for us. I scoured allrecipes.com for vegetarian dishes, as he is vegetarian, and that I would also enjoy. I came across this one. Interestingly enough, I had never eaten goat cheese pizza, let alone goat cheese! I was definitely going out on a limb, and the outcome was a pleasant surprise.

Ingredients:
-1lb. bread dough [[I used Boboli pre-made crust but in the future would use the wet dough from Trader Joe’s]]
-1tbsp. olive oil [[I use extra virgin but it doesn’t really matter…]]
-salt to taste
-1/2tsp. ground black pepper
-3 sprigs fresh basil, chopped
-1 1/2 tsp. minced fresh rosemary
-3/4cu tomato sauce
-4oz crumbled goat cheese [[goat cheese is very expensive, just to warn you, and I could only find smoked goat cheese, thus it didn’t crumble, so we chopped it into really small cubes; the smoked goat cheese gave the pizza a much stronger flavour]]

Directions:
-Preheat oven to 425 F
-Roll dough on a floured surface into a 15in. circle [[or whatever]]; roll edges to the center to form a crust. Brush the entire crust with olive oil and sprinkle with salt, pepper, and 1 sprig of chopped basil and rosemary. Bake in preheated oven for 8-10min. or until crust is golden [[with a pre-made pizza crust like Boboli, you don’t have to do this pre-bake]].
-Spread the crust with tomato sauce, sprinkle with 2 sprigs of chopped basil and goat cheese. Bake for an additional 8-10min., or until the crust is brown and the pizza is heated through.
